We had the pleasure of trying @de_plantain’s jerk chicken outside White City Station one day and immediately knew we had to grab a jar of their jerk marinade to take home. It’s made with scotch bonnets, scallions, pimento, thyme leaves and ‘sticky’s secret blend’ among other ingredients, and honestly, is one of the best jerk marinades I’ve ever used. The dark, fragrant, rich and perfectly spiced paste does a great job of seasoning meats and fish – all we use is a couple of tablespoons of the marinade and some crumbled seasoning cubes and that’s it! The marinade does the rest of the job! Let it sit in the fridge for at least 4 hours before banging it in the oven until it’s golden and bubbling or under the great for a smokier authentic taste.
What we love about the marinade is how the intense colours and flavours of the blended spices, citric acid and herbs really seep into the meat and tenderise it in the process - you can taste the seasoning in every bite! The brown sugar in the marinade helps caramelise the outside to give it a slightly sticky finish but still maintaining every savouriness, it really is a great marinade to have in the fridge for those days you need a but of sunshine in your dinner!
